Healthy-Grain Free Trail Mix

So it’s obvious that I am a busy woman; I can barely keep up with this blog! Since I am normally eating on-the-fly and then heading straight into my work-out, I like to have easy, portable snacks with me. I found this recipe from The Primalist and I made a few adjustments to fit my tastes. It is so simple to make, tastes better than anything you’ll get in a bag, and is crazy healthy. Also, you can eat a little and it will go a long way, about 1/4 of a cup will do you good.

Ingredients:

  • 1 c of dried fruit; I suggest a mix of dried blueberries, cranberries, and raisins
  • 2 cups of mixed nuts; walnuts, pecans, almonds, cashews, and pistachios (they can be whole or pieces)
  • 1 cup of coconut flakes
  • 1/8 cup of coconut oil
  • 2 tbsp of honey
  • 1 tsp of cinnamon
  • 1 tsp of vanilla extract
  • 1 egg white; whisked until frothy
  • Pinch of salt

Directions:

Preheat oven to 300 degrees F. In a small saucepan, heat the coconut oil and honey over medium heat until melted. Remove from heat and mix in cinnamon, vanilla extract, and salt. Set aside.

In a large bowl, add nuts, fruit, coconut flakes,  and oil mixture and combine until coated evenly. In a small bowl, whisk egg white until frothy. Add egg white into large bowl and coat the nut mixture evenly.

On a baking sheet lined with wax/parchment paper, spread the trail mix from corner to corner. Place in oven and bake for 30 minutes.

Remove from oven and let sit for an hour and ENJOY!!!

The mix is crunchy,  sweet, and makes a ton! Enjoy this great, gluten free snack!

Feel free to experiment and try adding seeds, flax, different fruits, etc. Happy Eating!
