Roasted Summer Veggies with Chicken Meatballs

Roasted vegetables are so freaken delicious, it will blow your mind. If I had a place that had a grill, I would totally do that too, but such as it is…we cannot grill at our apartment. Regardless, roasting vegetables are super easy, hardly any prep or clean-up, and barely need to be seasoned to taste good. I decided to add a little protein to this dish by making chicken meatballs. Again, easy and delicious, plus it yielded plenty of leftovers.

This recipe is actually gluten-free and grain-free so check out that noise.

Chicken Meatballs

Ingredients:

  • 1 lb of organic, ground chicken
  • 1 tbsp of sodium-free Italian seasonings
  • 1 tsp of coconut flour
  • 1 tsp of coconut oil
  • Salt and pepper to taste
  • Goat cheese for garnish

Directions:

In a small bowl, combine ground chicken, seasonings, coconut flour, salt and pepper. Note that the mixture will be sticky, but not to worry! You still be able to make meatballs. In skillet, melt coconut oil over medium high heat. Take a small piece of the chicken mixture, roll into a ball, and place in skillet one by one. Cook for roughly 5 minute per side or until a lovely golden crisp as formed. You will need to cook in two batches. Once cooked, remove from heat and set aside.

Roasted Vegetables

While you can actually make this with any seasonal veggie, these are the veggies I chose

Ingredients:

  • 1 zucchini; halved and then quartered
  • 1 yellow squash; halved and then quartered
  • 1/2 of a large sweet potato; halved and then quartered
  • 1/2 large sweet onion, quartered
  • 6 garlic gloves, skins removed
  • 5 crimini mushrooms; halved
  • Drizzle of olive oil
  • Salt and pepper

Directions:

Preheat oven to 450 degrees. Line a large baking sheet with aluminium foil and scatter the veggies over the baking sheet. Make sure it is not too crowded and if it is, just grab another baking sheet and cook two batches. Drizzle with olive oil and place in oven for 20-30 minutes. Check your veggies after 20 minutes and see if they are fork tender. If not, cook them a little longer.

Once they are cooked, remove, and salt and pepper to taste.

To serve your fantastic meal, grab a lovely white plate, place roasted veggies at the bottom, then add in 3 chicken meatballs and top with any type of goat cheese you would like!
